What Is Lentil Vegetable Stew?

Lentil vegetable stew is a dense combination of lentils, vegetables such as onions and carrots, and some spices. Lentils are very versatile, so nearly any type of vegetable can be used to add depth and substance. If they are not washed, then they will impart a dark brown-black color to the dish and a dusty, earthy undertone that some people find disagreeable.

The vegetables should be chopped so they are roughly the same size and can cook at the same rate. When served, the stew can be mixed with meats such as chicken or pork, or made creamy with a spoonful of sour cream.
